Waffles: Serves  our family for 2 breakfasts (we like them so much we just reheat in the waffle iron for round two after several days).  Divide by 3 to make 4 servings. 

1.       Soak overnight covered on the counter:

Grind 1 ½  cup kamut, 1 ½  cup oat groats, ¾  cup spelt, ¾  cup brown rice.
Add flour to 4 ¼ c kefir/buttermilk.

2.      In the morning add:

3/8 c. melted coconut oil
½ -3/4 c. club soda (start with ½)
Separate 4 eggs: add yoke to mixture, beat whites but don’t add yet.

            Next add:

 1 ½  tsp. baking soda
 2 TB baking powder
 1 ½+ tsp. Real salt
                      
Lastly fold in the egg whites. Check consistency.  It should roll off the spoon at a medium speed smoothly.  Add more club soda and/or kefir if necessary.  If the batter does not stand up enough to fill both sides of the waffle iron, its too runny and needs more flour.

Note:  If you don’t have a grain mill these can be made in the blender still using whole grain.
